Thursday evening dinner was a lovely experience at the Château de Nalys Wine & Dine event held at Hygge Dining & Bar, a casual dining spot in George Town, Penang. Partnering with The Wine Shop (Penang), the event featured intricate depths of the French wines paired with a specially designed tasting menu.

As for the dishes, each one has been arranged with meticulous care. For starters, there is the Savory Marshmallow and the Sweet Potato Terrine with snapper mousse and punch of umami flavor from the nori. For these two starters, Hygge definitely excels at elevating the simple ingredients and flavours to greater heights.

Savory Marshmallow and Sweet Potato Terrine

 

A serving of house-made Parker House Roll lands on the table. The roll with a light flavor on its own is served with a scoop of Madras butter. Despite its yellowish color, it is a little spicy. The pairing is the Saintes Pierres de Nalys Châteauneuf-du-Pape Blanc 2019 – a youthful white wine consisting of Cinsault, Grenache, Mourvedre, Muscardin, Syrah, and Vacarese. It is intensely perfumed with freshness, complemented by notes of citrus, spices and flowers.

This is soon followed by Nasu with mushroom XO and cabbage crisp. It is simple grilled eggplant and the charring brings an amalgamation of sweetness, smokiness, and saltiness. Pairing with the dish is the Saintes Pierres de Nalys Châteauneuf-du-Pape Rouge 2016. The full-bodied punchy red wine perked up the palate with freshness, supple tannins, and seductive aromas of ripe fruits, and is well suited for both beginners and seasoned drinkers.

Next is the Pan Seared Red Lion created with turmeric, kaffir lime, and confit potato. The searing crisps the fish skin, with the flesh remaining moist, and the confit potato made a nice bite companion. The rich creamy sauce had a fresh elements of kaffir lime balanced with boldness of turmeric.

Pairing with this seafood dish is the E.Guigal Gigondas Rouge 2019. From the appellation of Gigondas, the wine exhibit fine tannins, ending with a long elegant finish.

As for the main course, it came with a choice between beef or pork. While my companion had the Slow Roasted Pork Belly composed of cauliflower and black vinegar, I ordered the Angus Striploin with textures of Alliums, The less fat striploin with rich beefy flavor is easy to cut through and is highly enjoyable paired with the silky tannins and bold flavor of the Château de Nalys Châteauneuf-du-Pape Rouge 2016.

The sweet ending is the Carrot & Ginger Cake, a pleasantly sweet cake completed with walnut granola and orange sorbet. The carrot offers a textural twist while the ginger not only gives a hint of spicy heat but also pungency. Combined together with the orange sorbet, the light refreshing flavors are specially inviting after the meal.
