The sumptuous five-course Valentine Western Set Menu 2015 begin with a sophisticated presentation of Blue Crab and Green Apple Celery Panna Cotta with Baby Salad, Watermelon, and Orange Salsa.   Blue Crab and Green Apple Celery Panna Cotta

 

For this menu, the soup is the Cream of Agaricus Bisporus (a type of mushroom). The hearty mushroom soup with nice essence of truffle is made all the better with milk espuma (steamed-milk foam).

Following up is the main course, with a choice of fish or lamb. The Oven Baked Gadus Fish (a type of cod fish) is fresh and firm, and is accompanied by generous pile of greens – cauliflower, brocolli and carrot.

The pumpkin puree and dots of squid ink sauce made good accompaniment. The few dots of squid ink sauce nicely enhanced the fish but never too much to leave a black stain.

  Oven Baked Gadus Fish

 

The lamb rack done melting succulent is complemented by vegetables, coriander leaf sauce and  potato souffle made with egg, potato and cheese. The coriander leaf sauce gives the dish a fresh twist.

The grand finale is the sweet dessert; a combination of Dark Layer Chocolate Mousse with Crumble, and Spice Chiller Cheese Cake served on a plate with Berry Compote. The latter is much more to my liking as it surprises with delightful cheesiness and pleasant spiciness.
