Jazz Up Chinese New Year With Phoon Choy in Hokkien Prawn Mee Soup
BY CK Lam
For this coming Chinese New Year 2015 celebration, delight your family and friends with a hot pot of Chinese New Year Special Phoon Choy served in Hokkien Prawn Mee Soup. This hearty and delicious one pot dish is available at T&T Prawn Mee Shop, located on Lorong Selamat in George Town, Penang.
Together with a friend, we headed to the shop, run by Catherine H.K. Tang and husband Terence B.C. Tiow. The recipe of the soup is handed down from Catherine’s father, Tang Chooi Kee, who happens to managed the famous five foot way hokkien mee stall along Carnarvon Street (beside Star coffee shop).
The Chinese New Year Special Phoon Choy is cooked and served in a clay pot, with layers of “treasure” – seafood, meat and vegetable. The ingredients include abalone, big white prawn, pork belly, pork skin, fish maw, hiratake mushroom, broccoli and yau muck vegetable.
“It is not about creating a new dish but merely taking the phoon choy dish a step further with our flavorful hokkien mee soup. Pork bones and cleaned prawn shells are slowly boiled to retain the natural sweetness of hae (prawns) and bak (pork) flavors”, said Terence.
Terence filling the clay pot with layers of ingredients
The bottom of the clay pot is laid starting with vegetable, hiratake mushroom, fish maw and pork skin. These ingredients absorbed the soup well.
Topping the casserole is premium layers of pork belly, prawns and abalone.
Hot soup is poured over the pot of ingredients and left to simmer on a portable stove for 20 minutes. Terence managed to pull the soup off with a satisfying round flavor and slight spiciness. We enjoyed the soup with the different layers of ingredients.
This Chinese New Year Special Phoon Choy in Hokkien Prawn Mee Soup makes a good change for the Chinese New Year Reunion Dinner or anytime during the festive season.
The dish is available for dine-in and takeaways from 8th February till 5th March 2015. There are two different sizes: RM188 nett (for five people) and RM338 (for 10 people). Complimentary deep-fried pork lard and chili paste are provided.
