Jelly Mooncakes

Happy Mid-Autumn Festival. This year the mooncake festival falls on the last week of September. Shops are already selling the cakes. A friend gave us some mooncakes which is totally different. The main ingredient is made from Jelly (agar-agar).

The outer red layer is made from dragon fruit jelly (can replace with kiwi fruit – if you prefer green), the white layer from green beans jelly (can also use red bean) and the yolk from carrot jelly.

For the one below, the outer layer is made from purplish sweet potato (also can be replace with yam). Different fruits and veg will give you different colours and taste, so the choice is entirely up to you.

This type of mooncake is free from cholesterol, colouring and preservative but you get loads of vitamin C. It is very tasty when eaten cold and its not FATTENING……
